This Salmon, Spelt and Mixed Vegetables Salad is packed with fibre, protein, healthy fats, good carbs, minerals and vitamins, making it a very balanced dish that can be enjoyed warm as well as cold.

Salmon, Spelt and Mixed Vegetables Salad
Ingredients: (serves 4)
1/2 lemon zest (grated)
1 garlic clove
a handful of mixed herbs of your choice (I used parsley and basil)
70 g spelt
100 g mixed bell peppers
30 g red onion
80 g cucumber
100 g goat cheese
150 g cherry tomatoes
1/2 avocado
60 g baby spinach
4 salmon fillets (skinless)
For the dressing:
Extra Virgin Olive oil: 40 g
Dijon Mustard: 1/2 tsp
Apple cider vinegar: 1/2 tbsp
Ground pepper: to taste
Dried chilly flakes: to taste
Sea salt: to taste
Method:
Cook the spelt according to the pack instructions
Cook the salmon fillets (I steamed them)
Finely chop the vegetables and add them to a bowl
Once cooked, add the salmon flakes, the spelt (drained) and the dressing.
Mix all the ingredients together, serve and enjoy!
